that and cluches are designed to 'bite and hold' where as brakes are designed so that the force is variable, not on and off like a clutch if u get what i;m saying. That is also the reason why clutches can also have multiple plates since they're just designed to bite and hold and the heat due to friction is way less than in a breaking system because of this. If u were to use triple plates on a break u'd have massive heat build ups. In the end its just not necessary.
Triple plate cluches are used becuse they bite sharper, can handle more torue but also have less inetia associated with them (since the radius of the plates can be smaller than in a multiple plate clutch than in a single plate) and hence engine acceleration under load goes is much better.
