I have just read in the July 2019 issue of Racecar Engineering an article on Indycar CFD studies which states that DES provides better results than RANS (for example the outwash is overestimated by the RANS model).
Do you know if F1 teams use DES or RANS?

Mainly RANS as its much cheaper than DES although DES is occasionally used to investigate specific flow structures.

You can use both of them together, you just to switch the DES in some regions of your computational domain.
It's very likely that they are using this hybrid approach
