Often not all teams are running on the first day of the test, plus the teams are doing baseline runs. Equally the teams may shut up early on the third day of an engine failure or similar occurs. For me the middle day is always the best weather permitting at least if is going to rain you can reschedule for the last day.
Co-incidentally the media tend to wander towards the afternoon of each day and are almost non existent on the last day. Thus the teams tend to run new parts later in the day or later in the test. In my experience staying until the end of running each day is critical as any crashes tend to happen then? Plus then hanging around the pitlane after 5.00 (often open to those with confidence and who can look like they belong there) as the garages and cars get torns down and the mechanics don’t mind stragglers hanging around.
