Does anyone know, what are the other things they can adjust in the cockpit during the race (buttons, levers, anything...)?

You can adjust diff and brake balance. They are the main things, but I'm sure you can adjust revs, fuel mixture and probably heaps of other stuff.

There are a whole few more things that can be adjusted and you didn't mention....engine mapping, tration control....and yes they can adjust the fuel mixture and revs.

Mclaren has in their wheel at least these options too:
pre-programmed differential setup, speed limiter, engine mapping, launch control, wet/dry setup button, traction control, default settings button.
