I have been under the impression that there was a requirement that engines had to be a vee configuration of less than 180 deg. Am I wrong about this?

Concurrently, is there any information on firing order and cylinder numbering that I can access?

About the less than 180 degrees rules, I don't think there is such rule... There are some reasons why the 180 degree engine isn't used: It does not provide enough rigidity, and it is greatly affected by the high cornering G's.
