The size of center cooling inlet and all of that area kind of gives it away a bit

Ferrari does not have any (significant) radiator in the airscope, while Mercedes does. This clearly increases the height of the COG for Mercedes. It is a drawback of having very small sidepodes.

Is it the perspective, or does it seem like the Red Bull's underfloor streaks look a lot longer than Mercs'?
Quick and dirty overlay (color dodge mode) of both floors, the RB one distorted to (very) roughly fit the Merc one. I think it's possible to make out which is which - i'd argue that there isn't any big difference in length (gif)

I disagree. Mercedes are radiators in the airscope, Ferrari does not. I am not sure why you are saying that they are lower, maybe I misunderstood.

Mercedes main engine coolant radiators are definitely lower set than Ferraris
